100% Pinot Noir på fransk eg i de først ca. 6 måneder, giver denne champagne en dejlig rund smag – en smag jeg personligt er stor favorit af. Dette er Louis Brochet’s eget lille projekt og bliver produceret i et yderst begrænset antal flasker, ca 2000 årligt.

The Extra-Noir is composed of Pinot Noir and elaborate, for this bottling, with the 2012 harvest from the parcels "Les Chaillots" and "Les Hautes Vignes" classified 1er Cru. Pinots Noirs d'Ecueil on clay-limestone soils were vinified in oak barrels, themselves went with wood from the forest of Écueil, by Tonnellerie de Champagne. As in all Louis Brochet vintages, the vinification takes place as respectfully as possible of the wine avoiding any manipulation and useless intervention. The grape juice is intonned from the harvest to come out at the time of bottling, after a slow bonus and natural stabilization. In the barrels, in contact with the lees, the wine gains in complexity, in power, in sweetness. To balance this roundness, we keep all the vivacity and the intrinsic freshness of the grapes by not carrying out the malolactic fermentation. The "Extra Brut" dosage (5 g/l) completes the fullness and delicacy of the Pinot Noir d'Ecueil expression.

Tasting notes: "Deep straw-yellow color with silver nuances, limpid and brilliant, with abundant effervescence. The nose is pleasant, it evokes fresh red and black fruits (cherry, currant and blackcurrant buds), acidulous fruits which then leave room for pastry flavors (red fruit pie and pie shell). The aeration is oriented towards the quetsche but also towards toasted and vanilla fragrances. This nose is characteristic of Blanc de Noirs with generosity and vinosity. The palate is equally interesting with a frank attack, juicy greedy fruit and enhanced by tart touches. At the evolution this fleshy wine is full, corpulent and structured. Despite its vinous character, it knows how to seduce us with its roundness and its good acid support. Long, tangy finish (Montmorency cherry) and vanilla. Champagne to be favored at the table why not on a Magret of duck with cranberries." (Louis Brochet)
